Afternoon Treat


Nothing is more comforting than a delicious scone and a nice cupr of hot tea. In this particular case I made Blueberry scones and Earl Grey Tea. A nice way to stop and take a little break and enjoy the small pleasures in life!

Here's my recipe for Blueberry Scones:

1 cup fresh or frozen blueberries2

½ cups all-purpose flour

½ cup sugar

1 T baking powder

½ tsp salt

6 T unsalted butter, cut into pieces

1 large egg beaten

1 egg yolk for brushing

1 cup heavy cream

Preheat oven to 400 degrees. Using a food processor, add the flour, sugar, baking soda, salt and butter and combine until the mixture is like coarse meal. Pour out his flour mixture into a bowl. Add blueberries. (If frozen, be sure and coat them well with the flour mixture) Add the egg and cream. Stir just until the dough forms. Turn out the dough onto a floured surface. It will be sticky! Put some flour on your hands. Pat out the dough to form about an 8 inch circle. Using a 2 inch biscuit cutter (or whatever you have) cut the dough into 12-16 rounds. Place them onto a greased baking sheet (I use my Silpat) Brush the tops with a beaten egg yolk and sprinkle with a sugar. Bake for 18 minutes or until golden.
